I know I’m a little slow on the uptake, but what can I say? I’m a skeptic. Hollywood has been buzzing about kale for the last couple of years. I had tried the Buffalo Kale Caesar at Just Salad in Park Slope, Brooklyn, and I was immediately hooked. By the way, if you haven’t been to Just Salad yet, you must. They are a chain with multiple locations throughout Manhattan, and one in Brooklyn. And Hong Kong, apparently?
The best thing about kale is that it’s so versatile. You can bake it in the oven with a sprinkle of parmesan cheese. Braise it. Eat it in the form of a chip. In a salad. But the best part about kale (besides being packed with vitamins) is that it’s crunchy (unless you boil it down which I don’t really recommend). This translates to kid friendly.
I was in the supermarket a few weeks ago and was pleasantly surprised that my very mainstream supermarket carries pre-packaged salads with kale. And guess what? Two out of two kids in my house tried it. And liked it! If you haven’t bought it yet I’d urge you to give it a shot. They come in several flavors, but my favorite is the chipotle with the little chips in it.
